With thanks to the Pyrexperts, here are four gloriously tasty recipes for you and your family to enjoy this spring that are as scrumptious as they are simple to prepare.


Chicken & Olive Tagine


This is a great dish as you can let your hob do all the hard work! You will need...


Method...


• 1 chicken, cut into eight • 2 tbsp olive oil • 2 chopped onions • 2 lemons, quartered • 2 carrots, sliced • 4 potatoes, peeled and cubed • 2 cloves of garlic, chopped • 150g stoned green olives • 1 tsp cumin • 250ml chicken stock • 1 tbsp fresh coriander or parsley • Salt and pepper


Heat the oil and brown the onion and chicken in a Pyrex Slow Cook casserole. Add the garlic, lemons, carrots, potatoes, olives and cumin. Pour over the stock and season. Mix well and cover. Cook for 1 hour on a low heat. Before serving, garnish with the parsley or coriander.


SERVES 6 Apple and Fig Crumble


Quick and simple to prepare, this crumble works well with a variety of fruits. The oats and crunchy demerara sugar create a light, crispy crumble topping.


You will need...


• 4 large Bramley apples, peeled, cored and cut into chunks


• 6 fresh figs, halved • 2 tbsp caster sugar • Zest of 1 orange


For the crumble topping • 150g cold unsalted butter, cubed • 200g plain flour, sifted • Pinch of salt • 100g porridge oats • 150g demerara sugar


SERVES 6 Method...


Preheat the oven to 180°C/350°F/gas mark 6. Scatter the apple and figs in an even layer over the base of a 2.6 litre rectangular Pyrex dish and sprinkle with the sugar and orange zest. Combine the cold butter, flour and salt in a food processor and pulse until the mixture resembles breadcrumbs. Tip into a large Pyrex bowl and gently mix with the porridge oats and demerara sugar. Sprinkle the mixture in an even layer over the fruit. Bake in the preheated oven for 30 minutes until golden brown on top. Remove from the oven and leave to cool slightly before serving. Serve with custard, cream or ice cream.
