SAUSAGE CASSEROLE Serves 4
900g sausages 4 onions, sliced Oil 1 garlic clove, chopped
Salt and pepper 1 x 400g tin tomatoes
Bottle of beer
1 Preheat the oven to 180o
C/350o F/gas mark 4.
2 In a heavy flameproof casserole dish, brown the sausages and set aside.
3 Then fry the onions in a little oil until coloured. Add the garlic and cook a little longer. Arrange the sausages on top, season and pour on the tomatoes and the beer and cook gently in the preheated oven for about 1 hour.
4 Serve with lots of mash, flavoured with cheese, horseradish or mustard.

FIG, HAZLENUT & ALE CAKE
100ml of ale 100g of dried figs 50g of sultanas 150g of unsalted butter, softened
100g of icing sugar 50g of hazelnuts, toasted 75g of plain flour 4g of baking powder Butter for greasing 4 large eggs
1 Bring ale to the boil in a saucepan. Put figs and sultanas in a heatproof bowl and pour over hot ale. Cover and soak for 30 minutes
2 Preheat oven to 200°C/Gas mark 6. Roast hazelnuts on baking tray until brown. Turn oven down to 160°C/Gas mark 2. Line a 30 x 20cm baking tin.
3 Set aside two serving spoons of fruit. Blend remaining soaked fruits to a purée.
4 Cream the butter and icing sugar together until light and fluffy. Gradually add the eggs and stir in the fruit purée. Chop the hazelnuts and stir into the cake with the reserved fruit.
5 Sift flour and baking powder onto the cake mix and combine. Pour the batter into prepared tin and bake for 25 minutes.
6 Remove the cake from oven and leave to cool in the tin. Turn out and cut into small cubes.
