As a busy wife and mother of


three, April Bryson of Weaverville is very thankful that her family is easy to please at mealtimes. “I am re- ally glad that my husband and kids are not picky eaters,” she explained. “We have several recipes that I make once or twice each month. We love chicken dishes, vegetables, salads and anything with cheese. We all like to try new things too so that makes cooking easier as well.” Bryson has many sweet memories


in the kitchen when she was young, mostly spent with her mother (Jan Sorrells of Hendersonville) and her two sisters. “It was always so much fun when my mom would let all three of us help her cook.” Once Bryson was married, her mother-in- law, Lynn Bryson (also of Hender- sonville), introduced her to lots of new foods and flavors. “Most days, I really enjoy cooking. I definitely love baking the most, especially around the holidays. My kids like to help me bake too; for them, the messier the kitchen is, the better!” Te Bryson family moved to


Weaverville this past fall. Original- ly from Mills River, April is a 1993 graduate of West Henderson High School. She played volleyball for Appalachian State University and graduated in 1997 with her bach- elor’s degree in health promotions. She continued her education at East Tennessee State University, earning her master’s degree in Public Health Administration a year later. For the next five years, Bryson was the nurs- ing home administrator at Carolina Village Medical Center. Once she began her family, she left her career in order to be at home with her chil- dren. Bryson is currently a second


grade teacher’s assistant at North Buncombe Elementary School. Her husband Joe is a history and civics teacher at North Buncombe High School, where he also serves as the junior varsity basketball coach. He has been a teacher and coach for the past decade. Tey are the proud parents of three children: Ben (8), Jake (7) and Emma (4). Teir fam- ily currently attends North Asheville Baptist Church.

Bryson loves to spend time with her family, especially outdoors. Hiking and camping are two of their favorite family pastimes. Below are several

1 pkg cooked fettuccini 1 ½ lb ground beef, cooked and drained


1 t pepper 3 c mozzarella cheese 1 can cheddar cheese soup 1 – 30 oz jar pasta sauce 1 t Italian seasoning


Combine pasta, meat, soup and


sauce. Add pepper and seasonings and two cups cheese. Mix well. Place in casserole dish and top with remaining cheese. Bake at 400º for 25 minutes.


Chicken Pot Pie


3 large chicken breasts, cooked and diced


1 ¼ c chicken broth 1 can cream of chicken soup 1 c flour 1 large can Veg-all 1 c milk 1 stick margarine, melted


vegetables.


Combine chicken, broth, soup and Pour in 9x13 pan. Mix


milk, flour and margarine for crust and pour over chicken mixture. Bake at 400º for 45 minutes.


Chocolate Chip Pound Cake


1 box yellow cake mix 1 small box instant chocolate pud- ding mix


8 oz sour cream ¾ c water ¾ c oil 4 eggs 6 oz chocolate chips


Mix all ingredients well, adding


chocolate chips last. Bake at 350º for 30-35 minutes or until inserted knife comes out clean.


Deer Tenderloin Marinade Taw tenderloin and coat in orange


or lemon juice for 20 minutes. Add “Stubbs” beef marinade and marinate in refrigerator at least 12 hours. Re- move when ready to grill. Place alu- minum foil on preheated grill and add tenderloin. Grill to medium-well.


Breakfast Cheesecake


2 cans (8 count) crescent dinner rolls 16 oz cream cheese at room temp 1 ½ c sugar


4 chicken breasts, cooked and diced


1 stick butter, melted 8 oz pkg. Pepperidge Farm herb stuffing


1 can cream of chicken soup 1 c sour cream 2 cans chicken broth


Mix butter and stuffing. Spread


¾ of mix in bottom of dish. Layer with chicken. Mix sour cream, soup and one cup of chicken broth. Pour over chicken. Top with remaining crumbs. Pour one cup broth over top. Bake at 350º for 45 minutes.

1 t vanilla 1 stick butter 2 t cinnamon


Spray 9x13 baking dish with


cooking spray. Open one can of dinner rolls and lay in bottom of baking dish so they make one large rectangle.


In medium bowl, com-


bine cream cheese, one cup sugar and vanilla; mix well. Spread cream cheese mix on top rolls. Open sec- ond can of rolls and lay over cream cheese mixture. Melt butter in mi- crowave and pour evenly over cas- serole. In separate small bowl, mix ½ cup sugar and cinnamon with spoon. Sprinkle evenly over top of casserole. Cover with plastic wrap and then aluminum foil. Refriger- ate overnight. Te next morning, remove and allow to sit out 30 min- utes. Preheat oven to 350º. Remove foil and plastic wrap and bake 30-35 minutes until puffed and firm. Al- low it to sit for 15 minutes before serving. Cut into small rectangles to serve.


Oreo Dirt Cake


1 large pkg. Oreos 2 large boxes instant chocolate pudding


1 large tub Cool Whip Crush half of Oreos and layer in


dish. Prepare pudding as directed on box. Mix in half of Cool Whip and pour over crushed cookies. Cover with remaining Cool Whip. Crush remaining cookies and sprin- kle over top.

Chicken Casserole


Schools in session Saturday Buncombe County Schools will be in session Saturday (Jan. 29) to make


up for a missed day Monday (Jan. 24). Based on results of a parent survey taken earlier this school year, if the school system misses a day of school any Monday through Tursday of a given week, the system or district will make up the day for Saturday of that week unless there are extenuating circumstances. North Buncombe students have missed 12 days of school this school year.
