Adele`s Dishes The first in a series of regular recipes from
Adele Jordan, founder of the Chorlton-based Cracking Good Food

Rooty vegetable & bean one pot stew with herby dumplings
1 red onion 1 leek
2 carrots 1 large beetroot 1 large parsnip 1 small squash
1 sweet potato 3 tomatoes 3 cloves garlic 2 bay leaves 1 red chilli 1 lemon
bunch thyme tbs tomato puree 1/2 litre veg stock 1 can black-eye beans seasoning
METHOD: Roughly chop all the vegetables and place in casserole/pot.
Smash
the garlic, finely chop the chilli and add to the pot. Pour over the stock and add the puree, thyme and bay leaves. Cook in the oven or stove top (with a lid on) over a medium heat for 30 mins. the dumplings and cook for 40 mins.
Add Check the vegetables are soft,
squeeze over the lemon juice, add the drained beans, season and serve.
DUMPLINGS: 100g Self raising flour 50g butter 2 sprigs rosemary chopped splash water
Rub in the butter to make crumbs. Add herbs, mix with enough water to form a dough. Divide into balls and add directly into stew.
