Olive Oil Protects the Liver
Extra virgin olive oil can help protect the liver from oxidative stress and resultant organ damage, according to research from the University of Mona- stir, Tunisia, and King Saud University, in Riyadh, Saudi Arabia. When lab rats were exposed to a toxic herbicide known to deplete antioxidants in the body and cause oxidative stress, those that were fed a diet rich in olive oil were partially protected from liver damage. The organ plays a cru- cial role in ridding the body of toxic sub- stances.
