Jamie Oliver’s Platform for Healthy Change
Renowned chef and best-selling author Jamie Oliver teamed up with Ryan Seacrest, master of ceremonies for television’s American Idol, to produce six, one-hour, unscripted epi- sodes of Jamie Oliver’s Food Revolution. The ABC series, which debuted in early 2010, centers on Oliver’s challenge of working in U.S. schools to revamp their lunch programs. The pilot, filmed in a Huntington, West
Virginia, elementary school, focused on what foods children were served and the policies that dictated the school’s choices, as well as what families eat and why a diet of processed food and snacks causes serious health and obesity problems. A secondary goal for the pilot was to raise Huntington’s rank as the nation’s least healthy city, according to the U. S. Centers for Disease Control and Prevention list of Healthiest and Unhealthiest Cities in America. As he works with schools, Oliver develops recipes that are cooked from
scratch with fresh ingredients that meet school meal nutritional standards and budgets. “I want to prove that turning around the epidemic of obesity and bad health doesn’t have to be boring or dull in the slightest,” he says.

EDIBLE SCHOOLYARD
Alice Waters’ Model for Sustainable Nutrition
The Edible Schoolyard (ESY), established in 1995, is a one-acre garden and kitchen classroom at
Martin Luther King, Jr. Middle School, in Berkeley, California. It is a program of the Chez Panisse Foundation, a nonprofit organization founded by chef, author and food activist Alice Waters. The mission of the ESY is to create and sustain an organic garden and landscape that is wholly integrated into the school’s curriculum, culture and food program. Students who participate in the ESY program learn about the connection between their everyday food choices and the health of the community, the environment and themselves. Waters believes these lessons foster sound nutritional practices, responsible food choices and environmen- tal stewardship.
Although ESY program does not provide school lunches or aim to grow or prepare daily meals, it is meant to encourage students to make better future decisions regarding their environment and eating habits.
