I reckon I’ve got the best job at Heathrow! I have a fantastic team and we’re constantly evolving and


trying to improve our food.


I worked with The Fat Duck Group for 10 months before landing at The Perfectionists Cafe. I spent this time developing recipes and working out how we would serve extremely high quality food but fast.


Having customers from so many different nationalities and cultures is a big challenge, and means there’s always a diverse range of demands, tastes and expectations.


It feels like you’re going on holiday every day, which is pretty unique! Although that does mean you have to get used to working somewhere that requires an incredible standard of safety.


The team and I are just a handful of 76,000 people who work here every day as well as 100,000 passengers that depart from the airport daily - which is mind-blowing when you think about it.


We get so many amazing comments on our liquid nitrogen ice cream parlour and wood fire oven, people are wowed by it! We’ve also had some great feedback on the atmosphere and service.


I must confess it can be quite funny seeing people enjoying a cocktail at 5.30am, but as our morning could be the middle of the night for some customers, why wouldn’t you want to sup a Martini before breakfast!
