And over this same period, the health of Americans has worsened. In 1961, the American Heart Association recom-


mended a low-fat, low-cholesterol diet. The incidence of obesity among America was about 1 in 7 adults. By the early 2000s, 1 in 3 adult Americans were obese. Teicholz pointed out that diabetes rose from 1 percent


to more than 11 percent of the adult population dur- ing this time, and “heart disease remains the leading cause of death for both men and women.” Given these trends toward worse health in America,
