require very little care and yield enough for me to eat, freeze and have plenty to share with neighbors and friends. Consider planting some next summer or buying okra from a local farmer. The best tasting okra comes right off the plant. It starts to wilt and soften within a day or two which is why most okra is sold frozen. Fresh okra is crisp and crunchy when it is harvested, making it wonderful for salads and snacking. Raw okra is delicious. Simply wash the pods, cut off the ends and start munching. It seems okra has quite a bad reputation for its slimy texture. This slime (also called mucilage) has medicinal properties. Raw okra does have a small amount of slime but the more it is handled and cooked, the more mucilage gets released. This is what you may fi nd offensive but the slime has fantastic health benefi ts. If you have digestive symptoms such as acid refl ux, ulcers or hemorrhoids, this mucilaginous slime is just the natural remedy that can help ease your discomfort. Okra is also benefi cial for all of the glands in the body, including ovaries and our thyroid gland. Easy Okra Soup
6 washed okra pods 1 quart water Pinch of salt
Wash and cut off the ends of the pods. Cut each pod in half lengthwise. Boil 1 quart water. Add okra and cook for 10 minutes. Add a pinch of salt and consume the whole dish as a soup.
