Apple Raisin French Toast Strata


1 1 lb. loaf cinnamon raisin bread, cubed


1 8-oz. package cream cheese, diced


1 cup diced peeled apples 8 eggs


2 1/2 cups half-and-half cream 6 Tbsp. butter, melted 1/4 cup maple syrup


Coat a 9x13 inch baking dish with cooking spray. Arrange 1/2 of the cubed raisin bread in the bottom of the dish. Sprinkle the cream cheese evenly over the bread, and top with


the apples. Extra raisins can be added now. Top with remaining bread. In a large bowl, beat the eggs with the cream, butter, and maple syrup. Pour over the bread mixture. Cover with plastic wrap, and press down so that all bread pieces are soaked. Refrigerate at least 2 hours. Preheat oven to 325 degrees. Bake 45 minutes in the preheated oven. Let stand for 10 minutes before serving.


Makes 12 servings.


Cooking spray (such as Pam®) 2 cups diced cooked ham 2 Tbsp. butter, or as needed 7 slices bread, crusts removed 1/2-lb. American cheese, cubed 3 cups milk 6 eggs, beaten 3/4 tsp. dry mustard 3/4 tsp. salt


Spray a 9x13-inch casserole dish with cooking spray.


Spread ham into the bottom of prepared casserole dish. Butter one side of each bread slice; cut slices into cubes. Arrange buttered bread cubes atop ham; layer American cheese over bread cubes.


Whisk milk, eggs, mustard pow-


der, and salt together in a bowl; pour over American cheese layer. Cover dish with aluminum foil and refrigerate 8 hours or overnight.


Preheat oven to 350 degrees. Re- move aluminum foil from casserole. Bake in the preheated oven until cheese is melted and eggs are set in the middle, about 1 hour. Makes 8 servings.


Christmas Breakfast Sausage Casserole


1 lb. ground pork sausage 1 tsp. mustard powder 1/2 tsp. salt 4 eggs, beaten 2 cups milk


6 slices white bread, toasted and cut into cubes


8 oz. mild Cheddar cheese, shred- ded


Crumble sausage into a medium


skillet. Cook over medium heat until evenly brown; drain. In a medium bowl, mix together


mustard powder, salt, eggs and milk. Add the sausage, bread cubes, and cheese, and stir to coat evenly. Pour into a greased 9x13 inch baking dish. Cover, and chill in the refrigerator for 8 hours, or overnight.


Preheat oven to 350 degrees. Cover, and bake 45 to 60 minutes.


Uncover, and reduce temperature to 325 degrees. Bake for an additional 30 minutes, or until set.
