SWEET, SIMPLE SUMMER DESSERTS


Goofy Chocolate Cake (with Brown Sugar Frosting) Submitted by Summer Engelhard, Carpio, N.D.


Cake


3 cups fl our 2 cups sugar


2 teaspoons baking soda 6 teaspoons cocoa 2 tablespoons vinegar 2 tablespoons vanilla ¾ cup salad oil 2 cups cold water


1. Preheat oven to 350° F.


2. Combine ingredients in a bowl. 3. Pour into greased 9 x 13-inch cake pan.


4. Bake cake for 35 to 40 minutes. For cupcakes, bake for 20 minutes; mini cupcakes for 10 minutes.


Goody Bars

1 cup butter 2 cups sugar


2 teaspoons vanilla 4 eggs


1½ cups fl our


4 tablespoons cocoa ¼ teaspoon baking powder


1 cup pecans or walnuts, chopped


Miniature marshmallows


Brown Sugar Frosting 5 tablespoons butter ¼ cup milk


1 cup brown sugar 1 teaspoon vanilla 1 cup powdered sugar


1. Combine butter, milk, brown sugar and vanilla in a pot. Boil for three minutes.


2. Take off stove and beat in powdered sugar.


3. Frost cake or cupcakes. 1. Preheat oven to 325° F.


2. Cream together butter and sugar. Add vanilla and eggs; beat well.


3. Combine dry ingredients and stir into creamed mixture. Add chopped nuts.


4. Spread in a greased 9 x 13-inch pan and bake for 30 to 35 minutes. Cover top with marshmallows. Return to oven until marshmallows are puffed up, about 5 minutes. Remove from oven and cool.


Frosting


3 tablespoons butter (melted) 1½ cups powdered sugar, sifted ½ teaspoon vanilla


⅛ teaspoons salt 2 tablespoons cocoa 2 to 3 tablespoons milk


Combine ingredients and spread over cooled bars. Makes 24 bars
