Vernon and Tipton students attend summit


Ashtin Holmes of Manitou and Alyssa Hickenbottom of Vernon rep- resented SWRE recently at the 2012 Touchstone Youth Leadership Summit held in Oklahoma City.


They participated in a full day of leadership training and that evening attended an OKC Barrons vs Texas Stars hockey game. At the Leader- ship event, Ashtin and Alyssa received $250 scholarships from Touchstone Cooperatives of Oklahoma and SWRE.


The two girls earned participation


in the Touchstone event through their scores in the 2011 SWRE Youth Tour Essay Contest.


Ashtin is currently a senior at Tipton High School. She is the daughter of Kimberly Holmes. Alyssa is a senior at Vernon High School. She is the daughter of Kendel and Elizabeth Hickenbottom.


Davey Resource Group has been con- tracted by SWRE to complete GPS map- ping of the co-op system and inventory. SWRE members should be aware that Davey personnel are working throughout the co-op’s service territory to map and inventory every part of the SWRE util- ity system. The Davey workers can most often be spotted working on four-wheeler

What’s Cookin’ in the Co-op Kitchen...


You can cut up and measure all these ingredients up to a day ahead of cooking. That way, when you come home hungry, you can have dinner on the table in less than 15 minutes!


Tex-Mex Turkey Stir-Fry


1 pound turkey-breast cutlets 1 large green bell pepper 1 large onion


non-stick cooking spray 1-1/4 tsp chili powder 1-1/4 tsp ground cumin 1 tsp vegetable oil 1 cup corn kernals


3/4 cup bottled thick and chunky salsa


Directions 1. Cut the turkey cutlets into 2-1/2 by 1/2-inch thick strips. Cut the onion crosswise into thin slices and separate into rings. Seed the pepper and cut into thin slices


2. Coat a large non-stick skillet with cooking spray and heat over a high heat until hot. Add the turkey and stir-fry 3 minutes. Stir in the chili powder and cumin and stirfry 1 minute. Remove the turkey to a bowl and set aside.


3. Add the oil to the skillet and heat over medium-high heat. Add the onion and pepper and stir-fry 3 minutes. Return the turkey to skillet, and stir in the corn and salsa. Stir-fry until heated through, about 2 minutes.
