DRY BEANS Vermont Appaloosa


Beans have been a staple food in cuisine throughout the world for thousands of years. Archaeologists have discovered beans in ancient Egyptian tombs and in ruins of Native American habitats in the South- western United States. Packets contain 2 ounces of seed. Well-known as a powerhouse of nutrition, beans can also be a foundation for imaginative dishes. Abundant with soluble fiber, they combine well with grains. They are virtually fat-free, have no cholesterol and are a good source of vitamins. The mild flavor makes them perfect partners with spices and herbs. Although compact, 18-24", they frequently develop short runners. Green pods are flat, 5" long and ½" wide, and contain 4 to 6 kidney-shaped seeds mottled purple and white, with many variations occurring in the mottling – like the rump of an Appaloosa pony.
