SOMETHING FROM THE BAR?
The Pinnacle Grill carries an impressive range of wines, geared to suit most pockets. Here is the main selection:
CHAMPAGNE
Dom Perignon, Moet & Chandon, France, $199 Crystal Roederer, France, $296
WHITE WINE
• Cloudy Bay, Sauvignon Blanc, New Zealand, $78
The Pinnacle carries a $20/person
surcharge ($10 when it is open on some sea-days) yet, as Haberts points out: “The quality and cost of the ingredients prob- ably outstrip the surcharge.” Steaks and seafood predominate and one could say this is a first-class steakhouse at sea and be doing no disservice to the enterprise. All beef is Sterling Silver, shipped from the US. The extremely handsome dining room could be set down in the centre of Seattle, Holland America’s home city, and look right at home. The equally handsome Filet Mignon, New York Strip Steak, Bone-In Rib Eye steak, Porterhouse and Rib Eye would be right at home there as well. The Rib Eye, for those with robust appetites, is quite a challenge and frequently ordered, I was surprised to learn, by women. Well, I guess there is ample deck space to walk it off!
ou can also choose your own hand- crafted sauce: sun dried tomato, Master Chef’s green peppercorn and Maitre D’ garlic butter amongst them. Pinnacle’s Signature Skewers – conve- niently de-skewered before serving to save having to grapple with hot metal – include beef marinated with thyme, rosemary and marjoram; lamb marinated with garlic, cumin, honey and coriander and served

with a yogurt sauce; and a chicken-and- turkey combo, which arrives with onion confit and a tomato coulis. Their ‘Delectable Seafood’ – shrimps,
swordfish and tuna, seasoned with lemon, paprika, garlic, mustard, cayenne and dill – is delectable indeed Out of deference to vegetarians, there is also one ‘No surf, No Turf’ dish, with ‘Vegetarian Zen’ featuring an array of mixed vegetables seasoned with herbs de provence. The Pinnacle is under the direct command of executive chef Jodi Macleod, who personally
