VITAMIN C PROMOTES SKIN REGENERATION Using models of human skin, Japanese scientists applied vitamin C (VC) at concentrations of 0.1 and 1.0 millimolar — levels similar to those typically transported from the bloodstream into the epidermis. By day seven, the VC-treated skin showed thicker layers of living epidermal cells, and by day 14, the inner layer had become even more pronounced. In addition, the outermost layer of the skin had thinned while showing an increase in Ki-67-positive cells, a marker of active cell division. This suggests that vitamin C stimulates the production and turnover of keratinocytes, the cells that form the skin’s protective outer barrier. The findings, published
in the Journal of Investigative Dermatology, suggest that vitamin C may be especially beneficial for older adults or individuals with damaged or thinning skin, helping to enhance the skin’s natural regenerative capacity.
MORE FRUITS, VEGGIES COULD HELP SLEEP Eating five cups of fruits and vegetables during the day may significantly improve sleep quality at night. Healthy young adults reported their daily food consumption each day and wore a wrist monitor that allowed researchers to objectively measure their sleep patterns. Participants who ate more fruits and vegetables during the day were found to have deeper, more uninterrupted sleep that same
night. Eating whole grains and other healthy carbohydrates was also associated with better sleep quality. “Dietary modifications could be a new, natural, and cost-effective approach to achieve better sleep,” said co-senior author Esra Tasali, M.D.
ULTRA-PROCESSED FOODS MAY CAUSE OVEREATING Eating ultra-processed foods, which are high in chemicals and additives, may cause changes in the brain that can lead to overeating. Researchers at the University of Helsinki examined brain images of approximately 30,000 people and found that those with diets containing high amounts of ultra-processed foods had changes in brain structure linked to overeating. “Given the growing body of evidence, reducing ultra-processed food
intake and strengthening regulatory standards in food manufacturing may be crucial steps toward ensuring better public health outcomes,” said researcher Arsene Kanyamibwa.
