COMPULSORY display of Food Hygiene Ratings (FHRs) in England is something of an obsession with the Food Standards Agency (FSA). Ever since the ‘ticks’ and


‘smiley faces’ of voluntary schemes in the ‘noughties’, the public according to ‘Which’ although wanting to know, continue to be confused and make little sense as to why premises with a 0 can trade and others with a 1 or 2 are safe, while those with 3, 4 or 5 are safer still. Consumers understand


that higher ratings in hospitality mean more facilities, greater comfort and perhaps a better menu - accepting compromise being made according to price paid. But can the same ever apply to food safety? Can standards be compromised in the same way as quality? Particularly when the FSA


repeatedly tell consumers ‘there is no compromise’ and that they should expect food bought in a ‘greasy spoon’ to be every bit as safe as food in a Michelin starred restaurant. 95% of the public wanting
