Adding value to ham by adding different rubs, flavours and adornments will be well-received during the festive season, when joint centre-pieces play a more pivotal role. Ham, and pork in general, carry a number of different flavours really well, so in addition to offering the traditional clementine or sugar-based glaze, try tapping into other food trends we’re witnessing. Te ‘east to west’ trend is seeing a surge in popularity in American- inspired flavours, so a maple syrup glaze would work well,
to Pan Asian where you could even add some Chinese five spice. Te ‘drink up’ trend could also be a great one to tap into for the festive season. Here we’re seeing anything from ale flavoured hams – which could work well with local ales – or sloe gin braised ham seems to becoming increasingly popular. “Some would argue a

for an easy dish to feed a crowd this festive season, then pulled pork has to be the easiest of the lot. Zero effort for maximum flavour is a lifesaver during the festive period. Ensure shoulder joints are visible and weighing in at around 1.5kg. Cooked in a slow cooker or low and slow in the oven, pulled pork works well as a party food, or a lazy sandwich filling.
