WALTHAM FOREST COLLEGE SMITHFIELD BUTCHERY UNIT - DELIVERING BUTCHERY APPRENTICESHIPS


Waltham Forest College (WFC) in North East London has been delivering apprenticeships and training in butchery for more than 20 years. Apprentices train on


campus with a fully equipped and air-conditioned butchery room, equipped with blocks, a cold store and display cabinets where expert butchers are on hand to demonstrate traditional and new techniques to prepare students for future employment. A key aspect of


apprenticeships at WFC is bringing customer satisfaction to the forefront of butchery


practice. Te College has a public facing butcher shop offering apprentices practical experience in how to dispense cooking advice and advise customers on the right cut of meat for recipes. WFC prides itself on the


level of training given to apprentices that covers the breaking down of carcasses, efficient de-boning and trimming as well as correct labelling and displaying of meat in a retail setting. Together with sausage making, constructing recipes, food hygiene, quality control, correct use of tools and health and safety in the workplace.


Previous apprentices


successfully completing courses at WFC have gone on to work in independent butcher shops, retail chains, foodservice, meat wholesaling and supermarket butchery departments, with many advancing into supervisory
