how to make his delicious marinade. "The Barbeque trade has


become for us, probably the most important part of our business. Adding value to cheaper cuts with marinades is ever popular and make a real boost to profits. We find they sell throughout the year and even with the colder weather a good portion of our sales still contain many of these products. Here I share with you a


very simple and popular marinade that has always performed well for us in product competitions. It works very well with


either Pork or Chicken, and is free from listed allergens."


PROMOTIONAL TIPS


PORCHETTA MARINADE


Ingredients 250ml Olive Oil 250ml Vegetable Oil (Good quality, I usually use corn oil, cheaper oils can have an unpleasant aftertaste) 1 x Bulb Garlic 50g Fresh Rosemary 50g Fennel Seeds 40g Salt 20g Black Pepper


Method Place salt, pepper, and fennel seeds in a sealable container Smash garlic, remove woody parts then rough chop, (I usually leave skins on as I like the rustic look), then add to dry ingredients. Remove leaves from rosemary place into mixture, then rub to release oils from rosemary. Add oils & mix, (the mixture of oil prevents the olive oil from solidifying when cold).


Seal container, and leave ambient for a day for flavours to develop.
