Spicy Sweet Potato Soup Ingredients
1 pint veg stock 1/2 kg peeled sweet potato 1 red chilli (or more to taste) 1 tin coconut milk 1/2 leek 1 celery stick
• 1 onion salt/pepper
then add the chopped vegetables, ' cooking until soft. Dice the peeled sweet potatoes and add to the pah:
Once the potatoes start to soften, add your veg stock and cook for a
few more minutes. Add some salt and pepper, cook
for another minute and add the ■ coconut milk.
Taste to see if any more seasoning
is required and add to a blender. Once blended, pass the liquid
through a sieve and it's ready! Serve with fresh crusty bread and
butter. • Take care after handling chilli
- thoroughly wash your hands and avoid touching sensitive skin and around your eyes, as it can burn.
