• 60g/ 3 oz goats cheese, crumbled « 50g (1 Vi oz) mascarpone « lOOmI (31^ fl oz) double cream • 3 sun-dried tomatoes, chopped • salt and freshly ground black pepper • beaten egg
METHOD:
• Preheat the oven to 200'C/ 400F/ Gas 6. • Blanch the asparagus in hot water for 2 mins. • Remove from the water and drain.
• Score a border 1 cm/ Vi in around the edge of the pastry and prick inside the border with a fork.
• Mix the goats cheese, mascarpone and cream and season with some salt and pepper.
• Place the goats cheese mix onto the middle of the pastry and top with the asparagus.
• Sprinkle the chopped sun-dried tomatoes over them.
• Transfer to the oven and bake for 12 -1 5 mins. • To serve, place onto a serving plate.
