after a medieval tower overlooking the village of Rasiguere, loved by musi­ cians and music lovers and the setting for John Whib-' ley’s French Village Holi­ day. On the programme was

Local schoolboy Harry Fearnley-Brown will take on the leading role of Charlie, with supporting roles played by Anna Clay, Oscar Dummer, Ella Makinson and Karen Wilkinson. Raw prawns take only 2 to 3 minutes to cook so be careful not to overcook them; they are ready when they turn pink. Serve with freshly cooked rice or salad leaves.


INGREDIENTS: • 1 tsp turmeric


• pinch of salt

• juice of 1 lime . * 2 tsp olive oil


• 2 garlic cloves, peeled and chopped • 200g medium raw prawns, shelled • tsp paprika • 1 small dried chilli, crumbled


• 1 ripe papaya, quartered, deseeded, peeled and thickly sliced


• juice of a lemon or of 1 lime • 2 tbsp freshly chopped coriander • Freshly ground black pepper • 50g bitter leaf salad or freshly cooked rice


METHOD:


• In a bowl, mix the turmeric, lime juice and salt. Add the prawns and allow them to marinate for 15 to 20 minutes in the fridge.


• Heat the oil in large non-stick frying pan and saute the garlic over a medium heat for 1 minute.


• Add the prawns, paprika and chilli and stir-fry for 2 minutes.


• Add the remaining ingredients and stir carefully for 1 minute.


• Seconds before you finish cooking, toss the salad leaves or freshly cooked rice into the mixture then serve at once. • Garnish with a wedge of lime.
