CLITHEROE’S Pendle Club is marking its 56th birthday in style on April 27th. Clitheroe Camcorder Club is present-


ing a film, there will be a pie and peas supper and glass of wine. During the evening, a plaque is to be

Available in most stores until the end of May, the hardy, tradition­ al pure-bred hill lamb is unique to the Lake District and famed for its grey fleece, links to Beatrix Potter and ability to sur­ vive and thrive on fells up to 3000 ft. Saltmarsh Lamb has been extremely popular in-store from July until Novemjier, however, Herdwick lamb matures more slowly, soaking up the good­ ness and freshness of the high fells, has a stronger flavour and is at its best between January and May-aperfect match!" plied to the stores initially by four farmers. Ian Knight, of Nether Wasdale, is one of those farmers. He said: "Lakeland Herd­ wick Direct was launched last year to sup­ ply the public ysrith Herdwick Lamb by mail order and individual farmers have sold their lamb direct from the farm-gate. “The move to sell it through Booths


stores is a massive step forward for us and for Booths customers." Selling whole lambs to Booths, the


farmers receive a premium above the auc­ tion market price for their product. This will help secure the future of the threat­ ened breed in what is a difficult time of great change and reform in agriculture. There is only a relatively small popula­ tion of pure bred Herdwick left and every step must be taken to ensure'that this genetically important breed is not lost.

Herdwick country and invested money earned from her Peter Rabbit series to buy up farms under threat from development. On these farms she encouraged the revival of the Herdwick breed, and on her death in 1943, she left all her farms to the National Trust where they have been pre­ served for their contribution to the cultur­ al landscape. Crummock Water Shepherds’ Pie is a


popular, traditional dish using up cooked meat. Finished with a tasty topping of potatoes, leeks and Cumberland cheese, crisped up in the oven.


Ingredients • ,480g (lib) cooked finely chopped or


minced Herdwick lamb • 120g (4 oz) chopped onion • 60g (2 oz) butter • 480g (lib) peeled potatoes • 60g (2 oz) grated Cumberland farm­


house cheese • 120g (4 oz) chopped leeks • 125 ml (1/4 pt) inilk • 125-250 ml (1 /2 - % pint) thickened


gravy to bind the meat •


olive oil


• Vi teaspoon grated nutmeg • 30g (1 oz) butter (for leeks)


Method 1. Sweat the onion off in the oil without


colouring 2. Add the minced cooked meat and suf­


ficient gravy to bind. Bring to the boil and simmer for 15 minutes 3. Place the mixture in a suitable oven­ proof dish 5. Cook the potatoes, drain and return


to the pan. Place over the heat to dry off 6. Mash the potatoes adding butter,


milk and nutmeg. Beat well with a wooden spoon to make a creamy mixture 7. Cook off the leeks in a little butter,


mix well with the potatoes • 8. Place the potato mixture on top of


the meat and spread evenly. Sprinkle with the grated cheese and brush with a little . melted butter. Place in a hot oven tocolour.


Note: This dish must be heated through

CORVINO Montepulciano d’Abruzzo 2002, £5.99 from D. Byrne and Co. A deeply coloured full-bod­


ied wineit is matured in oak casks for eight to 10 months It exhibits a herby, cherry


and berried nose, leading into a rich palate of spices, cherries and some grip of tannins showing a good structure. Like most Italian red wines


with some degree of a tannic structure they are better when served with food, as this helps soften them out. It is excellent for most meat-


based pasta, bolognaise or lasagne or with some stuffed mushrooms.
