9 1 shallot, peeled and finely chopped 9 1 clove garlic, peeled and crushed 9 I tsp Dijon mustard 9 1 tbsp white wine vinegar 9 4 tbsp extra virgin olive oil

1. Cut pastry to fit a 22cm/9cm loose-;


bottomed tart tin. Prick the base with a fork and chill for 20 minutes. Line pas-; try case with baking paper and fill ■with


.baking beans. Bake in pre-heated oven Gas 4 ,350F, 180C for 20 minutes. Carer fully remove beans and paper. Return tin to oven and cook for a further 5 minutes.; Remove and cool slightly.


:; 2. Melt butter in a pan and add leek. Cook over gentle heat for 5 minutes. Add creme fraiche and simmer for 10 minutes. Add half the Camembert and > stir until melted. Reserve. .- 3. Heat the milk in a shallow pan and ;


add haddock. Poach for 5 minutes. Remove fish from milk, reserving milk. Remove skin and any hones from fish. Flake into large chunks and place in a howl. Add leeks, poaching milk, remaining Camemhert and beaten egg yolks. Season with freshly ground black pepper.


For the salad 1. Place lentils in a bowl.- Mix dressing


ingredients together, pour over lentils and toss lightly. Season to taste. Serve wedges of tart with the salad on the side.

name from a refreshing swimming hole on the Wemyss family farm in Pemberton, Western Aus­ tralia. It has long been popu­


lar with the locals and was probably used by hot cabbage pickers to cool their toes in the days before the Wemyss’s turned their hand to vines. Land-owners and tea

Wemyss family grew Chi­ nese cabbages (for export to China, no less) until family friend David Hohnen, of Cape Mentelle/Cloudy Bay fame, reckoned the cool hills of Pemberton might be just the spot for grow­ ing grapes and planted the seeds of an idea. Five years later the


nascent vines were produc­ ing fruit of a quality David could not resist and a partnership was formed. With Cape Mentelle’s


expertise the prime vine­ yard fruit has produced wines of great purity and depth. FONTY’S POOL


CABERNET MERLOT at £6.39 is a medium-bodied fruit-driven wine. I t was blended from


60% cabernet sauvignon and 40% merlot with sub­ tle use of American and French oak, lots of rich blackcurrant fruit and a soft rounded finish, perfect with turkey. Among the white -wines


is a superb SAUVIGNON BLANC SEMILLON a t £6.39, it is very fresh and aromatic, it makes a won­ derful aperitif or to accompany smoked fish.


Great days of steam


THE last days of steam on Lan cashire’s railways are recorded in a new book stuffed full of colourful photographs. East Lancashire


was one of the strongholds of steam, and Michael S. Welch’s “Lan­ cashire Steam Finale” records that fact. Most railway pictures


last


were taken in the days when black and white pho­ tography was the norm, but most of these are from the 1960s and are all in full colour, which makes a pleasant change. There are plenty of


shots of the West Coast Main Line - everything from gleaming red Corona­ tion class pacifies hauling passenger trains to less glamorous but equally fas­ cinating freight trains. There is also the Preston


to Blackpool route, which once took East Lancashire holidaymakers for their annual break.


Then there are scenes on


some of the lesser railways of the county, like the Lon- gridge branch and the Poulton to Fleetwood sec­ tion. There is a good chapter


on the Preston to Colne line. There is Blackburn to Hellifield, too, showing the delightfully-maintained Chatburn station, for example. And there is the Copy


Pit line from Burnley to Todmorden. The photographs are excellent and are accompa­ nied by some authoritative and well-written captions. “Lancashire Steam


Finale” is published by Runpast Publishing at £10.99, and is available from local bookshops.
