THIS week’s Dish of the Week recipe is the second, and main course, of the be iuscany ni the Spring theme

restaurant. One of the best-loved

regions ofltaly, Tuscany still lelains its medieval charm.

sauce and pasta and is one of the dishes chosen by chef Henk Van Heumen to represent his Tuscan theme. To accompany this mouth-wa

roads through hamlets and villages, farmyards and wine estates. Numerous wine estates will welcome you for a wine tasting and often sell their olive oil as well.

WIIH all the new wines that appear daily on the shelves of wine merchants and supermar kets throughout the country, you could be forgiven for thinking that those producers

who have a long history of winemaking have been left behind. One gentleman who could never be accused of stag

nating and living in the past is Miguel Torres Junior. The Torres family has been growing grapes and

producing wine in the Penedcs region of Spain since the 17th century. In fact, Torres is the largest individually-owned producer of premium red and white wine in Spain, as well the leading brand of Spanish table wine in the United States. Miguel studied oenology in Burgundy, which gave

him the ,desire to create wines from grape varieties such as Cabernet Sauvignon, Pinot Noir and Char- donnay, that were considered purely French. This may sound like old hat, but ne actually started

“experimenting” in the early ’60s, long before e v e r y o n e e l s e jum p e d on th e “ n o b le grapes”bandwagon. Miguel’s hard work, which included fights with the

he writes his symphonic master piece. Thirty years later, he is s t i l l th ere and his symphony remains half-written. “Mr Holland’s Opus" is a kind of,

“Goodbye, Mr Chips”. Over the years, the film charts him through a series of highs and lows; rows with: the vice-principal, helping a star athlete get a music grade, the death of that self-same star athlete in Vietnam and a crush on a pupil with a singing voice like honey and looks to match. We watch Holland grow older,

from an astonishingly convincing 30-year-old to 60. Dreyfu^s’ real

authorities about planting “incorrect” varieties, finally paid off in 1979, when his Gran Coronas Black Label 1970, a stunning red made from Cabernet Sau vignon, knocked Chateau Latour 1970 into second place at a wine Olympics organised by France’s “Gault Millau” magazine. The rest, as they say, is history.

One of Torres ’ in ter e s t in g whites is Vina

Esmcrclda. This blend of Muscat and Gewurztra- mincr grapes is a delightfully fruity medium dry wine, with flowery aromas and a light touch of sweet

served with sauces, and is available from Whiteside’s Wine Merchants, Shawbridge Street, Clithcroe, for Jto.Jo. Those of you especially fond of German wines will find this a very acceptable alternative. Viva Espana!

age. The decades pass in clever montages of key events and pop tunes — your toes will certainly

tap. Herek’s film tugs at the heart

strings with the deftness of a har pist. Holland and his wife (Glennc Headly) have a deaf son, cruelly

distanced from his father’s pas sion. After a life of selfish disdain, Holland makes it up by serenading

him with John Lennon’s “Beautiful Boy”. You’ll weep or cringe. “Mr Holland's Opus” is a witty

gence and humour. Droyfuss c a r r ie s th e film with

film, which deals with otherwise staid subjects, such as education, music and deafness, with intelli

much aplomb and, to his credit, at the end is not afraid to look worn- out and weary. For a rousing send-off, following

forced retirement, his former pupils gather and play his “opus”, the piece of music he has been working on all his life. “We are your symphony”, a former pupil comments tearfully, but, God love him, they sound awful.

schmaltz, “Mr Holland’s Opus” still manages to hit the high note. You can see it at Apollo Five, Blackburn (01254 51779) and Warner, Preston (01772 881313). T h e re sa Ilohson
