Vazisubani Estate tells a story more than a century in the making. Located just two hours from Tbilisi in the heart of Kakheti, Georgia’s premier wine- producing region, the Vazisubani Estate was built in 1891 by the renowned nobleman Sulkhan Chavchavadze, whose legacy shaped the cultural and educational life of Georgia, especially Kakheti. Time, however, took its toll on the palace and vineyards, but the story did not end there. In 2013, a new chapter began. Vineyards were


replanted, the ancient wine cellar restored and the palace reborn as a 19-room boutique hotel. Georgian and British architects and designers carefully crafted a modern identity, while honouring the estate’s traditional elegance. Today, Vazisubani Estate is both a revival and a


living tradition, where an uninterrupted centuries- old winemaking, refined cuisine and hospitality flow from history into the present. In the rolling hills of Kakheti, visitors can spend


a day strolling through the sunlit vineyards, then enjoy a guided tasting tour that reveals the journey from harvest to fermentation, showing


how sun, soil and centuries-old techniques shape every bottle, with each wine perfectly paired with seasonal Kakhetian cuisine. Perched beside the 19th-century palace, the


glass-walled restaurant opens onto the sweeping vineyard views. Sunlight floods the space, merging contemporary elegance with vintage charm — a perfect setting for savouring exceptional cuisine. In a 140-year-old cellar, the heart of Georgian


winemaking beats on. Clay qvevri (vessels), buried deep in the earth, nurtures wines through winter fermentation and spring drawing, preserving methods honed over 8,000 years.
