More than 90% of ingredients are sourced within 60 miles: hydroponic greens from Maun, hormone-free poultry from small farms, quail eggs and wild herbs from women-led cooperatives. Grass-fed beef is aged in-house; seafood is brought only from sustainable, seasonal fisheries. Every dish carries a story of community and tradition.
