Perched on the historic Buena Vista Estate (Estd. 1789) in downtown Nassau, John Watling’s Distillery is where Bahamian history, handcrafted rum and vibrant island culture come together in one unforgettable destination. Overlooking the harbour and shaded by centuries-old olive trees on Delancy Street, the 18th-century estate invites travellers to experience The Rum of the Bahamas both in the glass and through the stories of its past. Each visit begins with a complimentary tour, led
by local guides who recount the Bahamas’ colourful legacy of pirates, explorers and revolutionaries. The tour winds through the Storehouse, where oak barrels rest in the tropical warmth and gleaming copper distillation columns tower overhead. It’s here that John Watling’s rums are slowly crafted using traditional small-batch methods. The journey continues at the Rum Academy,
where guests take part in tasting sessions and mixology experiences that explore the subtle flavour profiles and craftsmanship behind the brand’s signature blends. From understanding the impact of barrel ageing to creating island-inspired
cocktails, the academy offers a deep dive into the soul of Bahamian rum culture. At the heart of the estate is John Watling’s
Tavern, a colonial-style bar serving a refined list of house cocktails. The almost-famous piña colada, made with John Watling’s Amber Rum and natural ingredients, has become a guest favourite. Other standouts include the citrusy rum dum, the coconut-inspired skylarkin’, and the cascarilla sunrise, named after the island’s native bitter bark. Classic Bahamian music sets the tone as guests sip cocktails on shaded verandahs. The front lawn is home to local food vendors,
serving up bold Bahamian flavours, including conch fritters, jerk chicken and seafood. While a New Orleans Coffeehouse adds Creole flair with rich espresso and fresh pastries. No visit is complete, however, without a stop at
the retail store, where guests can take a piece of the island home. Here, bottles of John Watling’s rums are available for purchase, alongside branded merchandise and locally crafted souvenirs.
