A visit to Mount Gay is a journey through time, where guests can explore the distillery’s historic grounds and learn about the rum-making process, from sugarcane to the final product. The distillery uses water drawn from the original artesian well, dug in 1703, and still in operation today. The air carries the sweet scent of fermenting molasses, a key ingredient
that gives Bajan rum its distinctive character, evident in expressions like Mount Gay Eclipse. Connoisseurs can observe the traditional pot and column stills, where distillation transforms simple ingredients into a treasure of flavours. Mount Gay is also home to one of only two functioning Coffey stills in the world, a type of continuous still invented by Aeneas Coffey in the 19th century. The distillery’s expertise also extends to ageing, where time slows down within the oak, bestowing rums like Mount Gay XO — the original XO rum — with layers of rich character and an unparalleled smoothness.
