WINE ESTATE, TULBAGH Set high on the south-facing slopes of the Witzenberg Mountains, Waverley Hills planted its first vines in 2000 and focuses squarely on red cultivars, with Cabernet Sauvignon, Shiraz and Merlot making up the bulk of the vineyards. However, it’s the smaller niche plantings that mostly make this certified-organic estate worth a visit.

Winemaker Johan Delport has a long history of crafting great Grenache Noir – and the


Waverley Hills release is no exception. Likewise, a dollop of meaty Mourvèdre goes a long way in Delport’s delicious Shiraz-Mourvèdre-Viognier blend. Little wonder that it was the only red blend to win Platinum at the 2014 Michelangelo International Wine & Spirit Awards, where it also bagged the trophy for Best Organic Wine. Witzenberg means getting creative at times and the viticultural team utilises everything


from shade cloth (for keeping weeds out of the vineyards) to vuvuzelas (for frightening away


grape-stealing baboons) to ensure healthy vines. You’ll hear all these stories and more during a tasting at the cellar, where tours are also available by appointment. If you fall for the Grenache, book a table at the adjoining
