GET TO KNOW CHICKEN BROTH

Chicken broth is key for

flavorful soups, gravy, and more. Here’s what to know when you shop:

SHOP FOR TURKEY Know when to buy:

If you don’t have room to store a frozen turkey at home, buy 2–3 days before roasting and thaw in the fridge. Plan 1 day of thawing per 5 lbs of turkey. Know your size:

CHICKEN BROTH Classic broth has a lighter

flavor than bone broth or stock, making it a great sup-

porting player in any dish. Less sodium lets you adjust the seasoning to your taste.

Plan for about 1 lb of turkey per person, or 1.5 lbs per person for plenty of leftovers. If serving

4 people or fewer, consider a bone-in turkey breast. Know your pan: Be sure your roasting pan will fit your turkey, or pick up a large foil roasting pan at the store. Know your recipe:

Skip self-basting or already seasoned turkeys if your recipe includes a brine.

CHICKEN STOCK Stock is slightly richer than

broth and has a deep golden color. It’s perfect for slow- simmered dishes like stews, braises, and risotto, and for holiday dishes like stuffing and gravy.

5 WAYS to use pumpkin pie spice

Beyond pie, try this warm spice blend in our Pumpkin Spice Smoothie on page 28, or try these ideas:

BONE BROTH CHICKEN This broth has a bit more

protein, body, and richness than broth or stock. Use in quick, brothy soups to

make them taste like they’ve simmered all day.

Popcorn: Toss with popped popcorn or toasted pepitas (pumpkin seeds) for a fall snack.
