Whip up this super rich and indulgent fudge. Feel free to add goodies to the batter like nuts or shredded coconut.


2-INGREDIENT FUDGE


PREP TIME 25 MIN. – COOK TIME 0 MIN. READY IN 25 MIN. + 1 HOUR CHILL TIME MAKES 18 PIECES


- 2 cups semi-sweet chocolate chips


- 1 heaping cup Medjool pitted dates (about 12)


STEP 1 Line an 8×4 loaf pan with parchment paper, leaving an overhang on each side for easy removal. Set aside. STEP 2 Soften pitted dates by soaking in 2 cups boiling water for 15 min. (submerge dates fully). Remove dates from water and add to a blender, along with ¾ cup of the reserved soaking water. Pureé until consistency is a smooth paste (remove any hard pieces; sometimes a few small pit remnants remain and I don’t want anyone to hurt their teeth). STEP 3 While dates are soaking, melt chocolate chips in microwave, stopping and stirring every 20 seconds until they are velvety smooth (about 2 min. total). STEP 4 Add pureéd dates to melted chocolate and combine. Pour evenly into prepared loaf pan and smooth the top using the back of a spoon or rubber spatula. Sprinkle optional sea salt over the top. Freeze 1 to 2 hours. STEP 5 Remove; slice into 18 pieces (3 rows lengthwise, 6 horizontally). Store in fridge for up to a week.

SALTED CARAMEL MILKSHAKE

- Caramel hard candy, crushed into very small pieces (optional) - 1 cup unsweetened vanilla almond milk - ½ cup pitted dried dates


- ½ cup (heaping) frozen pineapple chunks


- 1 to 2 tbsp creamy almond butter - 1 tsp vanilla extract


- 1/4 tsp maple extract or maple flavor


- ½ cup (heaping) ice cubes - 2 pinches sea salt (optional)


STEP 1 To decorate rims: Dip the rims of 2 tall glasses in water, then into crushed caramel candy to line them. STEP 2 In a blender, combine milk and dates; process until well combined and there are virtually no date bits and pieces visible. Add the pineapple, almond butter, vanilla, maple extract or flavor, and ice cubes. Blend on medium speed just until the ice cubes are pureéd and the beverage is thick and frothy. STEP 3 Pour into the candy-rimmed glasses, add a pinch of sea salt to each, if desired.

- 10 slices turkey bacon, cut in half


STEP 1 Heat oven to 400˚F. Coat a baking sheet with nonstick oil spray. STEP 2 Wrap ½ slice turkey bacon around each pitted date, place on a baking sheet and insert a toothpick. STEP 3 Roast in oven for 10 min. Using toothpicks, turn each bacon-wrapped date on its side (toothpicks will be touching the baking sheet). Cook another 2 to 4 min. Using toothpicks, flip to the other side. Cook for a final 2-4 min. for a total of 14 to 18 min depending upon the doneness of the bacon. Let slightly cool and dig in.
