STORING MAPLE SYRUP

To store maple syrup, wipe the rim of the bottle clean after opening, seal well, and refrigerate. This is different from honey, which doesn’t need to be refrigerated after opening. Maple syrup can be stored in the fridge for up to 1 year. Let the syrup sit at room temperature for a few minutes to become pourable before serving.
Q: HOW CAN YOU TELL IF YOUR YEAST IS STILL ACTIVE?
A: Sealed packets of active dry yeast typically last up to two years; open packets or containers will keep for about 4 months in your fridge or 6 months in your freezer. To tell if it is still active, stir 1 teaspoon active dry yeast and 1 teaspoon sugar into a small bowl of warm water. If the yeast does not foam after about 10 minutes, it should be replaced.
If the syrup crystallizes, place the container in a saucepan of very warm water and let sit until pourable. Use maple syrup to add sweetness to the Roast Pork Shoulder with Maple-Soy Glaze on page 11.
