EVERYTHING BAGEL- CRUSTED SALMON BOWLS

4 (4 oz) skin-on salmon fillets 1 tbsp everything bagel seasoning 1 lemon 1 cup low-fat Greek yogurt 2 tbsp capers, drained and chopped
1 cup grape tomatoes 1 cucumber ½ cup thinly sliced red onion 1 tbsp olive oil 2 (8.8 oz) pkgs Nature’s Promise® Precooked White Quinoa
STEP 1 Preheat broiler on high. Line a rimmed baking sheet with foil. Arrange the salmon on prepared pan, skin-sides down. Season with the everything bagel seasoning, salt, and pepper. Broil salmon 5–6 min., until cooked through. STEP 2 Into a small bowl, finely grate the lemon zest, then squeeze 1 tbsp juice. Add the Greek yogurt, capers, and 3 tbsp water. Season with salt and pepper and mix until combined. Halve the grape tomatoes and thinly slice the cucumber into half-moons, then add to a medium bowl along with the onions. Drizzle vegetables with the oil and season with salt and pepper. Toss to combine. STEP 3 Microwave the quinoa according to package directions. Divide the quinoa among 4 bowls, then top with salmon, tomato salad, and yogurt sauce.
