Caramelized Peaches and Ice Cream

DIRECTIONS: Adjust the oven rack to 5
inches from the broiling el- ement and turn the oven on broil. Drop the peaches in a
saucepan of boiling water and boil for 30 seconds to loosen their skins. Remove the peaches from the pan and gently remove their skins. Cut the peaches in half and discard the pits. Arrange the peach halves
in a small baking pan in a single layer. In a small cup, mix the
sugar and cinnamon. Sprinkle the mixture evenly over the peach halves. Broil the peaches until

joy and kept us somewhat sane during this stressful time has been gardening and cooking. And what better time and place to do that than in Northern Cali- fornia during late summer when fruits and vegetables
are plentiful in our gardens and markets? Speaking of summer
fruits, what’s better than a ripe California peach? It’s hard to beat just biting into one but if you want to enjoy a very elegant des- sert with little effort, here’s something to try. Creamy ice cream on a warm, car- amelized peach combined with the crunch of sliced almonds will delight all of your senses and bring a smile to your face – and who doesn’t need that right now? Make sure you use
peaches that are ripe enough to easily separate in half.

INGREDIENTS 2 large ripe peaches (6 to 8 ounces each) 4 teaspoons organic cane sugar
¼ teaspoon cinnamon 4 scoops non-dairy vanilla ice cream 2 tablespoons sliced almonds
their topping caramelizes, 4 to 6 minutes. Watch them carefully so they don’t burn. Remove from the oven and place 1 peach half in each of 4 small, shallow serv- ing bowls. Place a scoop of the ice cream on each peach half. Sprinkle each with a half tablespoon of sliced almonds and serve immediately.
Mrs. Golden was shopping at a produce stand in her neighborhood. She approached the vendor and asked, “How much are these oranges?”
“Fifteen cents,” answered the vendor.
“Two for a quarter,” answered the vendor. “How much is just one?” she asked.
“Then I’ll take the other one,” said Mrs. Golden.
