INGREDIENTS & INSTRUCTIONS (for 8 portions): FOR THE CAKE: 3 eggs 300gm self raising flour 250gm cooking apples (peeled and chopped) 120gm cooking margarine 120gm soft light brown sugar 170ml fresh milk

Stalls selling jams, jellies and chutneys, cakes and desserts made from local surplus fruit as well as a fruit press making fresh apple juice. Activities for all the family including a ‘Longest Peel’ competition. Admission is free.

Visit the Stableyard to taste Merton varieties not commonly found and collect fresh juice. Try a range of harvest goodies from the pop-up stall and visit the garden centre to pick up tips on growing fruit trees. Admission free, donations welcome.

Open Day Mitcham Community Orchard 29 September
Pick some apples at the community gardening day. Tools, training and refreshments provided. Family friendly.

FOR THE TOFFEE SAUCE: 120gm light brown sugar 120gm butter 100ml double cream
METHOD:
• Place the brown sugar and margarine in the bowl of your mixer, attach the paddle beater and mix until light and fluffy (around 10 minutes), add the milk and eggs and a little of the flour, mix again until smooth.
• Add the remaining flour and the apple and mix gently until incorporated
• Put the mixture in the tin and place in the oven at 160°C for around 20-30 minutes or until risen golden, remove from the oven and put to one side.
• Place the brown sugar, butter and cream in a saucepan and heat to a temperature of 112-116°C (use a cooking thermometer to measure). Remove from the heat once at temperature, cover and allow to cool.
• Place your sponge on a board and spread the toffee mixture over the cake.
