PIZZA MUFFINS TO GO


Some parents see the end of the holidays as a blessing, falling back into the routine of early mornings, backpacks and freshly ironed uniform with a huge sigh of relief. There is though, that continual pressure of what to put in the lunchboxes that meets the minefield of what is considered healthy, and what your child will actually eat!


I have found that over the years in my cookery club and kids workshops, that kids are more likely to try new ingredients if they have had a hand in making the food themselves as they are better able to identify with the ingredients, and that sense of pride and achievement overrides most nose turning.


One of my daughter’s favourite lunch box things were homemade pizza muffins. The bonus of these is that you can add some sneaky veg in along with the cheese and tomatoes, and then top with whatever is that weeks’ favourite flavour – pepperoni, pineapple, peppers, tuna – the list is endless.


They store well in an airtight container to last the week or can be frozen and taken out when needed.


With the growing awareness of intolerances and allergies, it’s important to know that you can swap out the flour for a gluten free flour, and just remember to add a teaspoon of Xanthan gum to replace the job of the gluten. I always add about a tablespoon of extra liquid too, as gluten free flour is much more absorbent, and you can end up with a dry muffin.


INGREDIENTS


Dry ingredients: 300g Flour 1tbsp Baking 1tsp Salt


Wet Ingredients: 2 Eggs 100ml Vegetable Oil 200ml Milk


Pizza Ingredients: 2tsp Dried Oregano 1tsp Black Pepper 2tbsp Fresh Basil Half a yellow pepper, diced (or 50g sweetcorn) 200g Pizza sauce 150g Cheese (Grated)


For the topping: Pizza sauce 100g Chopped pepperoni 100g grated mozzarella
