freshness. Keg is easier to manage beer quality due to it lasting longer. It is still as good as when it was put in the keg. What causes the difference? It is around the container itself. The keg will be pressurised and thus there is not the opportunity for air to get in. With cask ale there is more opportunity for air to get in which in turn will affect freshness. The market will no doubt carry on with the pace of change, what changes do you see over the next few years? It is all about cans at the moment, we do a lot of cans. I am not sure if the canning growth will continue, bottles could come back in, or even another type of container may come in. I think changes in the future could
also be around the beers, there have been too stronger beers, too all hops, masking any faults in the process. There is a need to tone it down and get back to good taste and also awareness of health. You started your career at big companies and worked down to smaller, oſten in people’s work history it is the other way round. True, but in my case it has worked.
The bigger companies provide good training and grounding in systems, quality and procedures. All of these experiences I have embedded in my role at Redwell. I am trying to encourage that route
of training for our staff at Redwell. Steve and Marcel, our two brewers, I am encouraging them to take IBDD brewing qualification. They are going on the general certificate. It is all useful stuff to learn, in a smaller company like Redwell, you do everything. That is probably one of the key differences, so a wider knowledge is helpful. There are a lot less stresses working in a smaller brewery than in a larger brewery. This is turn, affects your health, your wellbeing and balance of your life, it is a shared passion. How would you describe the values of Redwell? Community, fun, and caring. Redwell Brewery is also the home for a number of events such as Art Boot Sale, live music, and of course food and drink events. How important is it for Redwell to be well grounded in the local community? Its our main value. Due to our location, and our directors and staff beliefs, it is what we are driven by.
I love to mingle with the local
community when our Taproom opens, and attend the events. A company is never solely about one thing, it needs more than just production of the product. It needs identity and belonging. People love this space and people
are prepared to walk a bit more to get something different, and they love the tap room. I spend a lot of time here and it is fun. So when is the Taproom open? Friday evening 5-11pm, Saturday 12-11pm and Sunday 12-8pm . We have charity events here as well. Thank you very much for your time. My pleasure
