CAULIFLOWER MUNCHIES


These crispy cauliflower bites make a great alternative to carb- and fat-loaded chips, and taste just as good hot or cold.


Serves 4


2 tbsp olive oil 1 tbsp za’atar spice mix 2 garlic cloves, thinly sliced


1 cauliflower, cut into florets, core and leaves discarded 1 tsp mild paprika A little coarse salt


TO SERVE (optional) 200g Greek yogurt 3 tbsp fresh chopped mint


1 Heat the oil in a large non-stick frying pan, add the spice mix and garlic, and heat over a low heat for 1 min to release the flavour of the spice mix.


2 Add the cauliflower and increase the heat to medium, then stir-fry for 3–4 mins until the cauliflower is just beginning to brown around the edges and is hot but still crisp.


3 Sprinkle with the paprika and a little salt and serve on their own or with the


yogurt flavoured with the chopped mint, if liked.

Middle East and is often sprinkled over flatbreads before baking.
