Christmas lunch creates high expectations. The perfect turkey, served with all its many trimmings, is what many people aspire to. And whether or not you believe in the religious aspect of Christmas, the annual family meal is meant to be about warmth, comfort and spreading happiness. There are some first-class turkey
farms in this part of Kent, offering beautifully dressed free-range birds. But the hopes and fears of all the
years is perhaps a little too much for the poor old turkey, a meat of limited
culinary possibilities. Whack the old bird in a roasting tin and blast it with heat. Turkey’s mild and chicken-like flesh
can easily be ruined or dried-out by over-cooking. For many, the flavour is delicious and to be savoured just once a year. But the scope for experimentation can be limited. Choosing a different meat as the
centrepiece of the festive table is nothing novel, but the break with a family turkey tradition can be one that requires some courage and not a little research.
