Recipes by Pushpa from the Spice Hut - Methi Lamb Malai
1/2 kilo diced lamb
3 tablespoons of methi (fenugreek) 1/2 teaspoon cumin seeds 1 large onion, finely chopped 2 large tomatoes, chopped 3 tablespoons cooking cream Salt as required 3 tablespoons oil
3 green chillies, finely chopped 1 teaspoon ginger paste 1 teaspoon of garlic paste 2 tablespoon cashew nut, ground 1 cup of water
Fry the onions, add the cumin seeds and fry until they brown off. Add the lamb and seal the lamb by cooking it slowly on low heat until lamb is cooked.
Add the tomatoes and the fenugreek, cook until tomatoes cook down.
Add all the above ingredients except the cream and cashew. Cook slowly for 15 minutes on low heat.
When the lamb is tender add the cream and ground cashew nuts and cook further for a few minutes. Check the flavour and serve hot.
