Just Just BACON PEACH JAM
1 1/2 pounds smoked bacon, cut into 1/2-inch pieces 1 large yellow onion, chopped 4 ripe peaches, peeled and cut into 1/2-inch dice 1 cup dark brown sugar 1 teaspoon freshly ground black pepper 2 tablespoons whole grain Dijon mustard 2 tablespoons Worcestershire sauce 1/4 cup apple cider vinegar 2 tablespoons bourbon (opƟ onal)
In a large, heavy-boƩ omed pot, cook bacon over medium-high heat unƟ l crisp. Remove from heat and remove bacon with a sloƩ ed spoon and set aside. Carefully remove all but 2 tablespoons of bacon fat from the pot and discard or save for another use.
Return pot to heat, add onions, and cook over medium heat, sƟ rring occasionally, unƟ l soŌ ened. Return bacon to the pot along with chopped peaches, brown sugar, black pepper, mustard, Worcestershire sauce, apple cider vinegar, and bourbon. Bring to a boil, reduce heat, and simmer, sƟ rring occasionally. Jam will become thick and glossy in about 30-35 minutes. (If your peaches are very juicy and release a lot of liquid into the jam, conƟ nue simmering unƟ l thick.) As the jam cooks, use a potato masher or spoon to break up the peaches. Remove from heat and cool to room temperature.
Jam can be stored up to a week in the refrigerator. To serve, smear soŌ cheese on a toasted bagueƩ e slice, then top with jam for a sensaƟ onal appeƟ zer.
peach GRILLED PEACHES AND ICE CREAM
8 freestone peaches 1 lemon 1 tablespoon vegetable oil 1 1/2 tablespoons packed light-brown sugar 2 teaspoons water 2 teaspoons pure vanilla extract 1/8 teaspoon ground cinnamon 1/8 teaspoon coarse salt 1 quart vanilla ice cream
Peel, halve, and pit peaches.
Preheat grill to high. Combine lemon juice and vegetable oil in a bowl. Add peaches; toss to coat. Place peaches (with liquid) on a large piece of parchment-lined foil.
SƟ r together brown sugar, water, vanilla extract, cinnamon, and salt. Brush over peaches. Fold foil to form a packet, crimping edges to seal. Grill, covered, for 15 minutes.
Slice peaches, and divide among 8 bowls. Top with scoops of ice cream.
