OATMEAL RAISIN COOKIES This recipe is sweetened with sweet apples


and raisins instead of sugar.


PREP TIME 10 MIN. – COOK TIME 30 MIN. READY IN 40 MIN. – SERVINGS 12 COOKIES


2 apples


2 cups rolled oats 1


/3 cup raisins ½ cup flaked almonds


STEP 1 Preheat oven to 325°F. Grate the apples and set in a bowl. Add the rolled oats, raisins, and ¾ of the almonds together with the melted butter and salt. With wet hands, knead mixture together to form a cohesive dough. STEP 2 Using wet hands, roll 12 balls and press flat into disks. Arrange on a parchment-lined baking sheet and sprinkle with the rest of the almonds. Bake on the middle rack of the oven for about 30 min., or until golden brown. Remove from oven and transfer to a wire rack to cool.


Per serving: 202 calories, 9g fat, 3g saturated fat, 10mg cholesterol, 51mg sodium, 27g carbohydrate, 4g fiber, 7g sugar, 6g protein

STEP 1 Preheat the oven to 350ºF. In a bowl, beat the egg whites and salt with an electric mixer for about 1 min., or until frothy. With the mixer on low, add the baking powder and gradually add the sugar. STEP 2 Continue to mix until glossy, firm peaks appear. Gently fold the grated coconut into the egg mixture. Using a tablespoon, spoon the batter into rounded balls onto a parchment-lined baking sheet, spaced an inch or two apart. Bake for 15 min., or until golden brown and cooked through. STEP 3 Let the cookies cool. When ready to serve, dust with confectioners sugar.
