Estereo, where everything is tinted slightly yellow-gold. The bar from Heisler Hospitality (Pub Royale, Queen Mary Tavern and others) invites you to sit all day long: It opens at 11am with coffee and pastries, while afternoons bring cocktails based on specific ingredients, like rum with aguardiente, Suze, falernum and lime.  I started working at a college bar to help pay for school. Then I worked for a catering company, making drinks for people who had gotten into old-fashioneds and Manhattans and were really particular.


 


 Baderbräu Brewing Company  Baderbräu Brewing Company isn’t particularly new to the


Chicago craft-beer scene—its beers have been around the city since 2012. But now the brand has its own massive brewery and taproom space, with 10 beers in rotation at all times. Three of those beers are the brewery’s flagships— Chicago Pilsener, South Side Pride and High Noon—and most have an easy-drinking ABV. To top it off, the space is ridiculously cool, with a huge mural of a psychedelic phoenix from local artist Brian Keller. The taproom also has a view overlooking the brewery. Time Out Chicago September–November 2016


When Fat Rice (2957 W Diversey Ave) partners Abraham Conlon and Adrienne Lo said they would open a reservations-only cocktail bar, we got very excited. You enter the Ladies’ Room through a red curtain in the back of the Fat Rice Bakery (2951 W Diversey Ave). It’s dark, with red lights and Chinese pinup posters. Cocktail lovers will fall for Conlon’s menu, with surprising variations on old favorites. The Dr. Manhattan features house-aged elements from “speculative Dr. Pepper ingredients,” making it a fruity, boozy take on a Manhattan. Be prepared to be adventurous, and you’ll fall in love too.  2957 W Diversey Ave (773-661-9170, eatfatrice.com)

 Inspiration comes from everywhere. Honestly, it could be a dish, a component of a dish, a flower or a sunset, a conversation. I enjoy using ingredients that make people say, “Wow, what is that?”


 It depends on my mood. It ranges from something bitter on the rocks, like Campari, to a gin and tonic to an old-fashioned to a negroni. If I’m looking for something softer, I’ll pick a fortified wine, like a sherry.


 Tuesdays are my day off, which is also date night. We love Boeufhaus (1012 N Western Ave; boeufhaus.com)—they have a great wine list and ridiculous food. Billy Sunday (3143 W Logan Blvd; billy-sunday.com) was my favorite bar when I first came to Chicago, and it’s still one of my favorites. I like to go there Sunday nights (when my boyfriend works there).
