Chicken thighs/drumsticks are oſten a


very good buy and although I must admit that most chicken I cook with is boneless (thighs and breasts), chicken with the bone in really delivers in the flavour department. Tis is an easy stove-top dinner which is


good served with rice. At home, I use my rice cooker but when on the road I use a method given to me by a friend. Ratio of rice to water is 1 of rice to 2 parts water. Place rice in a heavy saucepan, add boiling water, 1 tsp. Butter and Salt to taste. Bring back to boil, then simmer on very low heat with lid on (do not peek!) for 30 minutes. Turn off heat and let stand for 5 or 10 minutes. Sometimes, instead of adding salt, I add some of my favourite Veggie Broth Powder for added flavour.


Stovetop CHICKEN for Two


2 chicken thighs with drumsticks attached 2 tbsp. Olive oil 1 large tomato* 1/2 onion 1/2 green pepper 12 pitted kalamara olives Greek seasoning or thyme


Separate drumsticks and thighs, trimming away excess fat/skin. Rinse and pat dry, sprinkle with Greek seasoning and garlic powder. Brown chicken pieces on all sides in oil (about 10 minutes) and remove from pan. Set aside. Slice onions and green pepper and saute in oil for 5 minutes, add chopped tomato, seasoning, olives. Arrange chicken pieces back in pan. Place 2 small potatoes, quartered in pan. Cover and simmer on low for 45 minutes.


*If tomato doesn’t supply enough liquid, a splash of red wine will add flavour.
