the Rubble, we are passionate about food sustainability and the resources of our planet and therefore believe we need to stop wasting 1/3 of our food supply for our planet to sustainably continue feeding a growing population. Things aren’t going to change without everyone’s help.
Our hope is that each one of our jars is not only a practical solution to food waste but it also stands as a symbolic vehicle of our message; to treat your food as a precious, natural resource that needs to be enjoyed and treasured.
HOW DO YOU SOURCE THE INGREDIENTS USED TO
MAKE YOUR PRODUCE? l We work direct with farmers and pack houses to take fruit and veg that fails aesthetic standards, or is simply in glut. We work with the seasons and oddities I suppose. Just because a farmer has a great apple harvest, it doesn’t mean the demand for apples goes up to meet it. Or an oversized pear, a banana off the bunch or tomatoes that are too ripe to sit on a shop shelf for 14 days, waiting for a buyer. We are not talking about
bad food. It’s about taking the best but sometimes the ripest or odd shaped from the field that currently do not have a place in our supply chain.
WHAT ADVICE WOULD YOU GIVE TO DELICATESSENS AND FARM SHOPS TO HELP
TACKLE THE PROBLEM OF FOOD WASTE?
l Buy in season and British
as much as possible. l Encourage/support customers to waste less
from what they buy. l Stock your shelves wisely. Track your demand and
what you waste. l If you do have stock nearing its sell by date reduce its price, donate it to local charities or get creative and make a range of soups, bread and butter pudding or fruit compotes to sell.
FINALLY, WHAT WOULD BE UTOPIA FOR YOU IN TERMS OF THE RELATIONSHIP BETWEEN FOOD PRODUCER/ SUPPLIER AND
CONSUMER? l This is a very hard question as there is so much complexity in the food supply chain - as well as being governed by price and efficiencies. But if I was dreaming, it would be around consuming and creating food with the season in mind, and consuming what was locally produced first and then working outwards. Things would then not only taste better and fresher but our food supply chain would also hopefully be healthier. l
