“Vegetables of the season” is the answer to both of these questions.”


Is there anything you don’t eat? “No taboos whatsoever.”


Who inspired you to become a chef? “My grandmother was my inspiration. I grew up on a farm [in South West France] where she prepared the meals for the whole family. She frequently asked me to go to the kitchen garden to pick the ripe vegetables and I never forgot this important lesson - cooking starts with nature.”


What are the essential ingredients that you could not be without in your kitchen? “Olive oil, fleur de sel [hand harvested sea salt] and a spoon.”


Do you think cookery/food tech should be taught in all schools? “It wouldn’t be a bad idea; although teaching basic facts about nature would be even more useful. Natural resources are in danger; we eat too much meat and not enough vegetables and cereals and we eat too much fat, sugar and salt. It is vital and urgent to make the public aware that individual decisions can make a huge difference for their own health as well as for the planet.”


Has an increase in knowledge


about food led to more critical and demanding customers? If yes, is it a pleasure to be cooking today for a more discerning palate? “For sure a chef likes having demanding consumers – bearing in mind that palates still vary a lot according to culinary traditions.”


With such an international clientele at Alain Ducasse at The Dorchester have you ever been asked to cook a dish


that you did not know how to make? “I’ll answer this question by telling a story about IDAM, my restaurant in Doha in Qatar. During my first visits to Qatar, I did what I always do: learned about the local food habits and visited the local markets. I noticed that young camels were a much appreciated meat. From that, I created a “Camel Rossini” which became a must-eat dish on my menu. Of course, in my youth, I was not taught how to cook camel, but the French corpus of cooking techniques is so rich that I found a way!”


How do you relax away from your kitchen? “By cooking at home for my wife and kids.”


To celebrate a family or special


occasion most people choose to go out for dinner, so how would you celebrate? “It’s true that I prefer staying at home and that I enjoy cooking for friends and family on such occasions.”
