FOOD & DRINK Christmas Empanadas Pastry


• 140g plain flour • 100g butter • Pinch of salt Filling • 80g dates • 50g walnuts • Finely grated zest of orange • 2tbsp cream cheese


1 wrap the butter in clingfilm and put in the freezer until solid – about 1 hour.


2 Put the flour and salt in a large bowl and mix together.


3 unwrap the frozen butter and hold it at the end with the clingfilm so you don’t melt the butter and your fingers don’t get messy.


4 Coarsely grate the butter into the flour and mix together. add 1-2tbsp of iced water to bring it all together to make a dough.


5 wrap the pastry dough in clingfilm and put it in the fridge for one hour.


6 Chop the dates and walnuts and mix together with the orange zest and the cream cheese.


7 roll out the pastry on a well floured surface until it’s just thinner than a pound coin.


8 Cut out rounds about 8cm wide – we use a small saucer for this. Bring together the trimmings and roll out again to make more circles.


9 Put a teaspoonful of the filling on to each circle of pastry dough and seal the edges with a fork.


10 Put on a baking tray and chill in the fridge for 30 minutes.


11Heat the oven to 210C/Gas 7.


12 when the empanadas are chilled, brush with a beaten egg and bake in the oven for 12-15 minutes until well risen and golden brown.


13 Cool on a wire rack before dusting with icing sugar and serving.
