ture and made this a delectable choice. Frank considers himself a lasagna aficionado, it being his favorite pasta. The evening’s blackboard specials showed la- sagna verde – made in individual portions with

Orange has been serving some of the best – personally I would go so far as to say the best – Italian food in the county for 25 years. Bianca Bavand was brought

up in Italy. Her background and love of cooking inspired the reci- pes she created for her namesake restaurant, that are still the heart of the menu. It was great news to hear that daughter Marjan Bavand Dunn continues to run this charm- ing family eatery, and regulars will find the customary friendly atmosphere, as well as the expect- ed high-quality food. Marjan’s oldest son, Richard, continued in the family tradition, lending his personality to the roles of maître d and waiter this summer before leaving for Harvard. The kitchen’s emphasis is on simplicity and freshness. Nothing is smothered in an overwhelming sauce, but all ingredients are so fresh and carefully prepared, that the flavor of each remains. On our recent visit for dinner, I opted for one of the evening specials – linguini with chicken, rings of tiny orange peppers, mush- rooms and onions. Garlic, olive oil and herbs dressed the mix-

Frank could not resist, and gave it a gold star. He may have licked the dish clean had we not been in polite company. We chose wine from the very adequate list, with many labels offered by the glass. Although our own choices cen-

tered on pasta, Da Bianca has a full Italian menu. Antipasti, sal- ads, soups, all shapes and sizes of pasta, fish, chicken and meat se- lections abound to tempt all pal- ates.Ala carte dishes range from $6.50 to $36 at dinner time. From time to time, the restau-

rant follows another Bianca tra- dition and serves Osso Bucco. This is more than worth waiting for, and if you provide your email address, they will alert you to the next time this specialty will be prepared. Lunch is also a special expe-

rience with a slightly different menu that includes paninis. En- joy a delicious mid-day break between 11:30 a.m. and 2 p.m. Monday through Friday. Find Da Bianca at 7448 E. Chapman, tucked a little uphill behind the Pacific Ranch Market. Reservations are recommended – call (714) 289-1508. Buon appetito!
