CHRISTMAS themed food and drink markets are being held from the beginning of November until Christmas Eve. Every weekend offers an opportunity to buy fresh ingredients, many locally sourced, to help you cook up a seasonal dish to remember. You can be sure to experience other Christmas traditions, including carols, mince pies, mulled wine and present ideas. The added bonus is that in many cases, your purchases help local charities.

Apple mania at Tudor Park
Staff at Tudor Park, a Marriott Hotel and Country Club in Bearsted, near Maidstone, are going bananas over Kent apples. Head chef Tom Biddle has been
working with restaurant manager, Collin ten Dam, to create a Kent apple-infused vodka cocktail. The fruity drink will be the highlight of a special apple menu featuring a selection of dishes that celebrate the local harvest. “This is such a great local
product that it is a shame just to save it for apple pies,” says Tom. “Hopefully, the new dishes and the cocktail will encourage customers to experiment with this wonderful Kent fruit.” Apple-infused vodka will be made on a weekly basis throughout the autumn in Tudor Park’s kitchens, but it is also simple to make at home, says Tom. Cut three to four apples in large chunks and add to a litre of vodka. Leave to infuse for a week and then strain through a muslin before using. For a touch of spice, add one cinnamon stick to the
